Description Eucalyptus olida, known as Strawberry Gum, is a tree that typically grows to a height of 10–20 metres and is endemic to the Northern Tablelands of New South Wales. It has thick, rough, fibrous and flaky bark on the trunk and larger branches, smooth white or grey bark that is shed in long ribbons from branches. Cream-colored flowers precede small woody capsules in the growth cycle of the Strawberry gum leaf. The glossy green leaves are intensely aromatic and oil-dense. Strawberry gum is ideal for temperate conditions but can also grow in subtropical conditions. It prefers full-sun conditions and well-drained soil, tolerant of low soil fertility, and is frost tolerant down to -8C degrees. The mild strawberry/eucalyptus flavour and enticing strawberry aroma of the Strawberry gum leaf enhance a variety of culinary creations, including cooked fruit dishes, desserts, spiced jams, and confectionery, infusing them with the classic berry taste. Whether used fresh, dried, or ground into a spice, this versatile leaf elevates the flavour profile.
